“We’re in it,” Edge said as he heaped salad into his bowl. “We’re in greens mode now till December.”
It does feel good to be eating salad again! And making spinach smoothies, and topping off nearly every meal with microherbs.
Despite the hoop house collapse, the greenhouse is pulling through with overwintered lettuce, spinach, and mustard greens as our seed room abounds with pea shoots and microgreens.
Radish and turnip seedlings are also settling into the greenhouse soil, and early bunching onions aren’t far behind them.
The biggest excitement may be the tomato plants, which are already the biggest plants in the seed room, well past seedling stage at nearly 12″ high.
This time of year spring greens propel us as we move steadily toward summer harvests.
